Mr Killerman, as a young Mort Mitchell called him, lived alone in a humble tin shed in the hills behind the Kilikanoon Cellar Door. Entirely self-sufficient, he grew his own fruit and vegetables and roamed the valley for his meals with rabbits being his favourite gourmet treat.
Mort grew to know and respect this man of the bush, learning the secrets of the land and how to become one with the environment. Winemaking
Once harvested, the grapes were placed into the press where they were drained and gently pressed to tank for cold settling. The racked juice was fermented cool for three weeks to retain freshness and delicate aromatics. The finished wine was then stabilised and filtered to ensure clarity and longevity.
Appearance
Very pale lemon white.
Nose
Intense lemon citrus with white flowers and tropical fruit notes.
Palate
Bright, crisp and juicy, the palate is a concentrated array of lemon and citrus fruit. This is coupled by an undertone of lime cordial, green mango and slatey minerality. The finish is soft and seamless, with lemon-zest acidity keeping the wine fresh and youthful to the end.
