Place
Sectioned from our estate vineyards, the fruit was selected for how it was envisaged the two would integrate. The Malbec was harvested from one of the highest vineyards in Clare that benefits from the long setting sun light. The Cabernet was selected from a low lying block that runs along side a natural water course.
Vintage Conditions
The 2021 vintage saw a return to milder conditions from those of the previous season. Regenerating winter rains aided the vines in producing a full and balanced canopy. These mild conditions were embraced by both late ripening variates - and allowed the fruit to develop fully in the cooler season.
Winemaking
The grapes were harvested a day after each other and were crushed to a small open top fermenter. Approximately 5% of the Malbec rachis were returned to the must and plunged in. The must was then dropped to 4 degrees overnight. Following this, the chilling was turned off and the must was allowed to warm and naturally initiate ferment.
