Harvested from premium vineyards throughout the Clare Valley, bunches are handled to develop the unique personality of each vineyard. The Kilikanoon vineyards range across all three valleys that create the individual environment and region known as the Clare Valley.
Vintage Conditions
With regenerating winter rains, the 2021 harvest delivered balanced yields of highly flavoured fruit. The plump fruit ripened slowly in the cooler than previous seasons. The Shiraz thrived under these conditions, with cool nights and mild days, the shiraz ripened on the vine and began 'bagging', further concentrating the flavours naturally in the grape.
Winemaking
With the vineyards spanning the length of the Valley, parcels were able to be harvested at opportune time as the berries developed their rich flavour profile. Crushed into stainless steel tanks, the grapes were allowed to naturally begin fermentation. Once completed, the skins were pressed, and the wine placed into new and seasoned French oak hogsheads for 14 months. Once each batch softened, a blend that shows the refinement and richness of cooler climate shiraz was compiled but selecting barrels out of each batch.

Appearance
Deep red in colour that carriers all the way through to the final purple hue.

Nose
Bright red berries and subtle spiced plum aromas overlay soft fresh herbs with a touch of graphite.

Palate
Ripe dark berry flavours of blackcurrant and fresh raspberries are underpinned by subtle notes of mocha and dried green herbs while hints of fine French oak seamlessly appear and drive the persistency on the finish. This wine is in its prime now and will further enrich with time in the cellar.
