Place
Harvested from premium vineyards throughout the Clare Valley, bunches are handled to develop the unique personality of each vineyard. The Kilikanoon vineyards range across all three valleys that create the unique environment and region known as the Clare Valley.
Vintage Conditions
A dry yet cooler vintage, 2019 delivered small yields of highly flavoured fruit. The lower-than-average rainfall between December and harvest resulted in the grapes rapidly entering verasion and developing its colour. Shiraz thrived under these conditions, with cool nights and warm days, the shiraz ripened on the vine and began 'bagging' early, further concentrating the flavours naturally in the grape.
Winemaking
With the vineyards spanning the length of the Valley, parcels were able to be harvested at opportune time as the berries developed their rich flavour profile. Crushed into stainless steel tanks, the grapes were allowed to naturally begin fermentation. Once completed, the skins were pressed, and the wine placed into new and seasoned French oak hogsheads for 14 months. Once each batch softened, a blend that shows the refinement and richness of cooler climate shiraz was compiled but selecting barrels out of each batch.

2019 Covenant Shiraz - Cov
Overview
A covenant is an agreement, a pact, a promise made between people. In this sense Kilikanoon has made a covenant to our consumers to guarantee quality. The covenant is a classic example of Clare Valley Shiraz, selecting the very best fruit that represents the regions elevated distinctiveness and regional signature. It is a true representation of the benefits of multi-site blending across the Clare Valley."Matured for 14 months in French oak. Sandalwood and salted licorice rise up out of the glass, fighting for place over the blackberry bramble, blood plum and raspberry coulis. This is a gorgeous, opulent wine of grace and poise. There are layers upon layers of velvety flavour here. Luxurious, sybaritic, and bloody delicious." Erin Larkin - Halliday Wine Companion

Tasting Notes
Back Vintage Tasting Notes-
Appearance
Deep red in colour that carries all the way through the hue of the wine.
-
Nose
Spice plum and blackberry bramble aromas overlay soft
sandalwood and dried herbs.
-
Palate
Soft and plush raspberry flavours coat the palate before subtle flavours of red berry cassis and fresh berry coulis flow through the finish. The wine has hints of fine French oak that seamlessly appears and drives the persistency on the finish. This wine is in its prime now and will enrich with time over the decade.
