Ideal for the aromatic varieties such as Riesling with bunches ripening in cooler weather. These cooler conditions slowed the ripening of the grapes, resulting in bright varietal flavours, crisp natural acidities, and lower sugar concentrations at picking than prior seasons.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch2\u003eWinemaking\u003c\/h2\u003e\n\u003cp\u003e\u003cspan class=\"a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\"\u003eFruit for this Reserve wine was picked on the 1st of February. The whole bunches were then gently pressed, and the free-run juice cold settled for three days before being racked to stainless-steel tanks for fermentation. The fermentation was undertaken at low temperatures and continued for 17 days naturally finishing dry.
