Vintage Conditions
An ideal ripening season was well welcomed after consecutive dry years prior. This saw the vines well balanced with canopy and an even spread of bunches. However, still recovering from the previous years, the bunches and berries were smaller than average. This concentration produced free run juice of exception flavour with bright natural acidity shining through.
Winemaking
By arresting the ferment just before complete dryness provides the palate with just a hint of additional texture and roundness nicely balanced by naturally retained, crisp acidity.
