2017 Golden Hillside Cabernet

One of the wettest Spring & Summer periods Clare Valley has experiance for many years, however the vintage turned out to be one of the finest quality harvest. Cool conditions for the most part of February finished things off well, spacing out the harvest and allowing individual fruit parcels to be harvested at their optimum ripeness.

  • Winemaking

    Cabernet from Malcolm Parish’s vineyard and Farehams. Cabernet picked early march. Fermented in open fermenters for 7-8 days. Pumpover twice daily. Basket pressed into quality French oak hogsheads 5% new balance 2-5 years old. Maturation in barrel for 15months prior to blending and bottling. No Fining or filtration.


    Brick red in colour with youthful crimson hues.


    Dark cherry and plum notes complemented with dusty blackberry and choc mint notes.


    Generous, full and vibrant. Complex red and black fruit flavours are encased in a firm savoury tannin structure. Bright acidity on the finish gives length and persistence.
