Good late winter and early-spring rains led to an even budburst, good early canopy growth and contributed to mitigating frost damage. Dry conditions prevailed from November onwards, with rainfall well below average for the remainder of the growing season.\u003c\/p\u003e\n\u003ch2\u003eWinemaking\u003c\/h2\u003e\n\u003cp\u003eSourced from a 70+ year old vineyard in Watervale, the grapes were hand-picked and delivered straight to the winery. Developing flavour ripeness long before sugar ripeness, this fruit showed bright flavours due to the additional sunlight during its prolonged time on the vine. Whole bunches were placed into a stainless-steel tank and the fruit was lightly “foot stomped” prior to the natural fermentation beginning. This variety hails from Bordeaux and is primarily utilised in regional blends to lift varietal notes. The cool nights and higher altitude of the Clare Valley see this variety thrive, ripening slowly and developing a rich layered flavour.\u003cbr\u003e\u003cbr\u003e\u003cstrong\u003ePLACE\u003c\/strong\u003e\u003cbr\u003eThe first picked Riesling of the year, the grapes were harvested from Kilikanoon’s Morrison Vineyard. On the eastern facing slope, the Riesling rows run from the austere soils from the ridge down the face of the slope. As the flavour first develops after veraison, the grapes are harvest with their bright natural acidity that amplifies the varietal flavours.\u003cbr\u003eOur grapes are grown on Ngadjuri country.\u003cbr\u003e\u003cstrong\u003eVINTAGE CONDITIONS\u003c\/strong\u003e\u003cbr\u003eRegenerating winter rainfall paired with mild conditions formed the basis of an ideal growing season. The mild temperatures saw flowering occurring as usual, but the persistent cooler spring days resulted in a slower ripening. This allowed the vines to undertake veraison and develop rich and intense flavours at a lower sugar concentration, slowly maturing to peak ripeness and exceptional quality.\u003cbr\u003e\u003cstrong\u003eWINEMAKING\u003c\/strong\u003e\u003cbr\u003eDelivered to the winery, the fruit was loaded into the press and allowed to free drain. Once fully loaded into the press, the pure juice that freely drained was cut (separated) from the remainder. The juice was allowed to fully ferment dry and even undergo partial malolactic conversion before being snap chilled. The tank was sealed and allowed to sit on its fine lees for 6 months, undergoing regular batonnage. Transferred to bottles, the wine underwent secondary fermentation and once again sat on its lees for a further 13 months. One single initial press to crack the grape skins was made and the pure juice was cut from the remainder of the pressings. Allowed to sit and naturally clarify for 4 days, the juice was racked clean and fermented at low temperatures. At 10.5% alcohol, it was determined to be at an optimal sweetness \/ acid balance and the tank was snap frozen, stopping the yeast. A single, 2nd use white French oak barrel was filled while the remainder of the tank was sealed and allowed to sit on its fine lees for 6 months.
