This resulted in the vines staying in a vigorous stage for longer before entering flowering. This in turn delayed the production and ripening of the grapes. Ripening in\u003cbr\u003ethe cooler conditions, the berries were able to slowly develop their full flavors while maintaining good natural acidities. These ideal conditions for the variety made for a season that produced wine that has bold and pure fruit expressions.\u003c\/p\u003e\n\u003ch4\u003eWinemaking\u003c\/h4\u003e\n\u003cp\u003eThe single parcels of Riesling fruit were picked over the course of a week at ideal stages and were loaded directly into the press. The iridescent free run juice was then allowed to drain and held separately, prior to the gentle pressing of the grapes. Settled naturally, the clarified juice was allowed to warm and commence fermentation. The fermentation continued at low temperatures to retain the fruit intensity, delicate aromas and fine acid line.\u003c\/p\u003e\n\u003ch4\u003eAppearance\u003c\/h4\u003e\n\u003cp\u003eVery pale with a lemon hue.\u003c\/p\u003e\n\u003ch4\u003eNose\u003c\/h4\u003e\n\u003cp\u003eComplex and intense array of Meyer lemon, Tahitian lime and white flowers, combined with fine chalk and hints of fresh ginger.\u003c\/p\u003e\n\u003ch4\u003ePalate\u003c\/h4\u003e\n\u003cp\u003eConcentrated and juicy waves of lemon and lime juice coat the palate. As Pinot Gris is a red\/gray grape, harvest took place in early February during the cool morning hours to retain delicate aromatics and maintain acidity. The grapes were whole berry pressed to gently extract juice without drawing too much colour. After settling in stainless steel, the juice was racked and inoculated with a yeast strain tailored for Pinot Gris. The juice was then cooled and battonnaged for a week to build texture before being cold-settled, racked and inoculated with a special yeast strain.\u003cbr\u003eFermented at cool temperatures to retain th\u003cimg\u003ee beautiful aromatics and flavours, the fermentation naturally finished with a hint of residual sugar to provide the perfect balance to the naturally high acidity of the wine. After the 21 day fermentation was complete the lees were stirred once a week for two months to build roundness on the palate and soften the wine.
